Common questions
How sharp is "sharp"?
Standard sharpness is sharper than most knives are when new — excellent for everyday kitchen and pocket use. Choose fine or premium finishes if you prefer razor-sharp.
Will you damage my expensive knife?
No — we routinely sharpen high-end knives. Only enough steel is removed to reach a clean edge, and the bevel stays consistent. Decorative blades get extra precautions during sharpening. Please ask if you have questions or specific concerns.
Is it worth sharpening cheap knives?
Often, yes. A professionally sharpened budget knife is sharper than most knives are when new — even a fresh replacement off the shelf rarely matches a proper edge. If you enjoy cooking with a sharp knife, it's worth keeping the ones you already have in top form.
Do you sharpen Japanese knives?
Yes — single and double bevel.

What does "next day" mean exactly?
Approximately 24 hour turnaround. For larger orders or specialty work, we can discuss the timing.
